Wow, yeah, I'm not Ambi-anything (well, I guess I can use a spoon reasonably well with either hand). Having to learn to be a lefty would be a chore. I assume the more you do, the more dexterity you gain and the better you become. I can see chopsticks being way up the list of difficult to master with the other hand.
