I put a custom cutting board on my griddle. It's a gas griddle and takes 30 minutes to come up to an even temperature. Plus, it's PITA as Jim says. But it does make a great warming/holder during large event meals such as holidays. And being situated much the same as yours, anything but pancakes makes a mess out of everything close by. Not worth the trouble. Alas, the so called cutting board has become a parking spot for all things spice related — even the salt and pepper.
It's a waste and when the opportunity arises, I will convert the area into 2 more burners. But, as I said, junk Wolf's go for a grand, and that's too much money just to part out. At 400 lbs. not fun to move either.
