I think I'd try anticipating the nuts falling and place a type of netting that would allow for drainage and air and yet be able to be picked up walnuts and all. Obviously one big net would be a PITA.

When I did any kind of demolition I used many smaller drop cloths to catch the debris. I would layer them and take them out just when they were full but manageable exposing the next layer.
