Maybe reach out for advice on a Subaru SVX forum. Those cars were full of Alcantara and more than likely somebody had to clean a seat, or dash, or steering wheel, or....but before I used something in liquid form to remove the gum, I'd be inclined to try a piece of tape. Maybe scotch tape at first try then work up to maybe duct tape. Stick a piece on, rub it down then peel it off. See if the gum will stick to the tape.
