Us? We got the Premium Long Range RWD. It's the slowest* but also the longest range. I may miss not getting the AWD, but so far it hasn't been a problem.
And full disclosure, we didn't buy this "because it's a Mustang", we just bought a really good EV that fits our needs. It just happens to have a cool look to it.
* - Remember when 0-60 in under 6 seconds was considered fast?
