I also like overnight oats, either rolled or oat bran.
Another related note. If you cook pasta or rice (and presumably other complex carbs), let it get cold, and then reheat it, then the carbs are converted into "resistant carbs" which makes them act more like fiber.
Oats are the opposite. Oats already have a lot of resistant carbs, but once you cook them, they lose some of that. So overnight oats will retain that quality and therefor have fewer carbs that could get converted to fat.
