It's a good gig if you can get it (dating the hot daughter of a big wig, that is).
This is what is on the current "Air Combat USA" site.

This is your chance to see what flying a fighter plane is all about. Feel the adrenaline rush of rolling, looping ,and pulling up to 5 times the force of gravity, as you pilot your fighter plane through a series of simulated air combat aerobatic maneuvers. Learn to perform the most effective maneuvers used in aerial combat to prepare for flying an actual air-to-air combat mission with us against another Marchetti SF-260.

It doesn't look like they are still offering all of the same stuff, or maybe their website just sucks. It seems like right now, they take you up and let you fly the plane, but they also coach you on doing acrobatics and some (for most of us) high-G maneuvers.
I actually had a coworker that did it here.
When it was here, you could
1 go fly a plane where they have you do acrobatic maneuvers
2 simulate a dog fight (maybe against one of their other pilots?)
3 sign up and dog fight against a buddy
My coworker went and did a dogfight against his brother.
Still, probably much cheaper and easier than getting a pilots license and eventually getting enough time and money to get the sort of license and plane that can do the stuff that they do.
