Anecdotal only, of course, but the difference has been dramatic. I move more easily - particularly first thing in the morning - and my stretching exercises have become only uncomfortable, versus outright painful. Of course this means I'll stretch more, which, of course, means I feel even better.
As to meat, all I can say is that I "feel" positive and definite difference since I gave it up (notwithstanding the Gumbo and Jamby I mentioned previously).
I found this fascinating - definitely worth an hour-and-a-half if you're interested at all in perhaps going meatless....
