Cutting up a chicken is easy. It’s more about knowing where to cut it than what you use.

I use an 8 inch chefs knife. Before that, I used a Chinese cleaver, until I busted it. I also keep pair of kitchen shears around, when I want to cut out the back bone.

Literally anything decent will do it, you don’t have to spend $100 to cut up a chicken.
