Bob, I have a Rapala fillet knife that has yet to need sharpening after 12 years. I have two actually, my wife uses my first one for veggies and such until I did the 18* angle on all her pairing knives.
As far as one for chicken, I just use our old butcher knife, but like Java said, it is where and how mor than the what.
