I finished our kitchen remodel early this year including new plumbing. In some cases I used Sharkbite to tie in to existing lines, but I made the connections in the garage and ran Pex A from there to the kitchen. Sharkbite is great when they seal, but sometimes they don't; a leak can be very small and take a while to make itself known. I found a persistent small puddle of water on the garage floor after tying in and found one of the Sharkbites had a small leak. I ended up replacing that with a soldered on Pex adapter. Leak gone.

If the connection is accessible, Sharkbite is great. I wouldn't be comfortable with one behind the drywall.
