First, I am not a big fan of aftermarket Fuchs-looking wheels. I'm not completely sure why, but they just bother me. The proportions on the larger ones look wrong, and the black paint just screams "replica wannabe" to me. But that is a personal aesthetic thing.
Going with 17s should open up your tire choices a fair amount, but you will still be constrained in width. Assuming the 17s have the same backspacing as the stock 914 wheels, you're going to have a difficult time fitting anything wider than 205s, and it may require some work to fit those under one rear fender or the other, depending on your car.
That said, Tire Rack shows a pretty good selection in 205/50-15 sizes right now. There are 11 "Extreme Performance Summer" tires currently available, and 7 others in the "performance" categories. None of them is likely to be a bad choice for cornering grip.
EDIT: I take it back. The selection of narrow tires in 17" really does seem to be very limited! You're probably better off sticking with the stock wheels unless you flare your fenders.
