I think the GI tract acclimates. Had food poisoning three times in the first 18mo after moving to NM. The next 24y? Solid as a rock. Now I'll eat anything with no drama.
Our 9yo is addicted to what we call "chickarones" - you pull the skins of of some chx thighs after a short roast then fry them crisp in ghee or chicken fat. Heck, I'd also rather eat those than the chicken itself
(edit - yes! those above with the little hot sauce pack are awesome!)

In Japan, you can find small restaurants that just serve grilled chicken skin.
In Indonesia, KFC restaurants will sell you fried chicken skin.
I find chicken skin way tastier than pork skin.
