So I did what Julian suggested - put a large(r) manifold connection to get as much signal for the MAP. The IAC from my understanding acts as a small input of air, similar to the hand throttle, and to certain aspects of the WUR. That's why with my non-IAC'ed system, I have to use the accelerator to provide that air.
