Sounds like some possibly weird electric issue going on. A couple things I'd want to try:
- Load test the battery
- Disconnect the battery when the car is sitting, see if it still dies
- Try swapping in another battery, see if the issues go away
Sometimes batteries fail internally and give weird behavior, even intermittently.
