How about several coats of boiled linseed oil? It soaks in and then polymerizes. It may be more of a pain then a pine/plywood table is worth.
I think the best would be whatever marine grade stuff they use on those beautiful old boats. I think anything not specifically designed for outdoor (sunny FL) is going to have a problem due to the sun. I think the marine stuff will have UV blockers/inhibitors that protect it from the sun.
