Will the table see direct sunlight? Need to make sure the wood is very dry prior to sealing with epoxy or it can just lift off. Do you have any automotive bodyshop connections? Automotive polyurethane clear coat works quite well, I have used that for a Cherry table I made. How about using IPE T&G glued together and just oiling?
