Most humans also leave behind some toilet paper. Humans also carry some bad diseases that will get into the rivers and streams. HIV, Monkeypox, Hep A B or C. and others. Animals have none of those and it is good to keep it out of the environment. And if one person sees a good spot to drop a deuce, other will likely try the same spot. More spread of diseases.
At also comes down to the old adage all hikers and adventurers should abide by, leave nothing but footprints, take nothing but photographs. There is no valid reason to crap in the woods and leave a steaming pile along a path. The next hikers don't want to deal with it. Leave it like you found it, crap free.
