This bike only has 7900 miles on it, surprised the clutch could be worn out of spec, but the adjuster was too tight so... could be?

I don’t think your clutch plates are worn out, they may be swollen to the point that they are out of spec. I think on the 750 a good stack number is 1.08 inches, but you might want to double check that. I got all of my Norton parts from Baxter cycle. They pretty much carry everything for Nortons and are some good people to deal with. Colorado Norton make some great aftermarket parts, but are a bit pricey.

One last thing, back in the day, enough people complained about the effort it took to pull in the clutch lever that Norton finally gave in and changed the fulcrum point on the lever mount. I think this was back in 1973. So your bike probably has the old style lever mount. In this picture, the old style is in the back and the newer in the front.
