juanbenae's situation is a bit different. He is on a short timeline. On a short timeline, I think your goal cannot be much more than just weight maintenance.

Not exactly...you need carbs. Carbs are the fuel that humans use first and foremost. But you need to be smart about WHAT carbs you're eating (and there's carbs in damn near everything, by the way).
The "proper" diet for a normal healthy person should be 40/40/20--40% protein, 40% carbs, 20% fats.
