Do the touristy stuff, but you will be there long enough to also rent a car and get out into the country.
I know Paris has a good hop-on hop-off tourist bus that will take you around the city and up to Montmarte for a few bucks.
I found Florence to be relatively laid-back. Could have stayed there a month.
