That is a MUCH more efficient use of the space.
Our kitchen SUCKS in terms of thoughtful use of space. We've got cabinet area we cannot even reach without being on all fours with our head under the counter. EVERYTHING is wrong with the design of this kitchen. In any case, we did some spice racking a week ago:
