Sourdough kinda comes in 2 varieties--gluten free or not. Depends on whether or not you use yeast, I think. Wife started baking sourdough several years ago specifically due to that--she's been gluten free for a long time and learned she could do sourdough. She's made some incredible things that surprised me...cookies, pizza dough, biscuits...all with sourdough and they're phenomenal.
