Correct, a traditional water heater.
Old large 5400sq ft home. Lived here 30yrs- nothing has changed, just I am cooking more and the hot water at the kitchen sink is annoying.
I did ask our local plumber- and he had no help or suggestions.
The undersink tankless system was just a wild idea. We have plenty of room, but only 120 power under there.
