I was watching a restaurant show on Netflix. It was this guy that had an amazing restaurant in Finland. He actually was getting his beef from a dairy specifically because he thought that it was better than the meat that he could get that was specifically for it's meat.

"Fäviken was a restaurant located in Åre Municipality, Jämtland, Sweden. It was run by chef Magnus Nilsson between 2008 and 2019."

In this outtake, Evan talks to Magnus Nilsson, chef/owner at Faviken in Sweden, about using older dairy cows as beef. Most steers are fed grain and slaughtered between 22 and 30 months but Nilsson prefers to utilize the meat from older dairy cows that have been fed on grass for their whole life. Some of his beef comes from cows that lived to be 7 to 10 years old.
