There is an oil cooler on the back of the engine, with a thermostat that is part of the "triangle of death." There is also the external thermostat in the right wheel well that controls oil coming back from the cooler in the front of the car.
It sounds to me like your triangle of death thermostat is stuck open (which I think is how they are designed to fail). Mine was.
I doubt that engine is happy to rev out at 140°F oil temps.
