Eat more protein and fewer carbs, as a general rule. Avoid processed foods as much as possible.

Change your lifestyle, don't "diet." Lift weights. Build muscles that will help you burn the fat. It's actually "better" than cardio (you still need cardio, though).

You should be able to ride your bike with a torn meniscus--not sure about the PCL. I tore my meniscus about a year ago...couldn't run, but riding a bike didn't hurt at all.
