Well, the issue went away before the car made it into the shop, so they weren't able to replicate the problem.

However, since it went in, it got some replacement parts:

Distributor cap & rotor
Closed throttle microswitch
Fuel Filter
Air Filter
Oil pressure sending unit and block (to get rid of some drips on the floor)

So far the issue hasn't presented itself again, and whatever the shop did during the diagnosis and service seems to have improved pep and throttle response. Hopefully the issue stays gone.
