As for my car, I bought the car several months ago as a rolling chassis. No motor or trans. I have fully broke the car down and am starting from scratch. I don't have the opportunity to change one thing at a time since it's all in pieces

I will check out those Koni sport shocks. My biggest question is if I should go to coil overs and a new setup up that will allow for 3.5" mounting brakes |
For Street, coil overs and bigger brakes do nothing for you but deplete your wallet. The stock ATE M Calipers are way more than is needed for ordinary driving.
It looks like you may have Konis struts already. These can be rebuilt for less than new units.
