I think it's going to be phone dependent, and some/most phones don't seem to have an easy way to disable 5G UC. In most cases you can disable 5G which is all 5G, not just 5G UC.

Apparently, the difference between 5G and 5G UC is N41 (5G UC - 2.5GHz) vs N71 (5G - 600MHz)

I found one recommendation online for iPhones - "It won't disable it fully, but you can switch to 5G Auto and Low Power Mode, it will theoretically keep stable connections instead of trying to search for the best. No guarantee itll fix it but worth a shot"

I found another recommendation for Samsung (Android) - "For Samsung phones enter the following code *#2263# > sim 1 > NR5G > uncheck NR41 NSA/SA > go to main > apply"

I don't know if either will help you. Most of what I've seen is "you can disable 5G entirely"
