I ended up going with this:
It's a Zada Tech Display that I designed a 3D printed bezel for.
It works beautifully for dual AFR.
I have been working more with Zada Tech and could likely get whatever you wanted in the same form factor that could display dual readouts of anything you wanted. It can also be designed to rotate through many more outputs with a small joystick (dial).
