Yes, I have thoughts. If you want a project, go back to stock. It's easier as long as you don't get nit-picky about correct details, and it will be unique because these days
everybody wants to turn their antiques into hot rods. It's hard to find an old truck whose history has been preserved.
Given your criteria you could buy a 5 year old Tahoe for $30k, saw the top off of it, and you're done. It would hit all your criteria and you would be time and money ahead.
