modern jets weigh 5x more and are already so big, they would not have enough height to hang em and still have useful space under them.
They also carried 15 aircraft more, despite being much smaller carriers than current CVN Ford Class :

36 × Grumman F4F Wildcat

18 × Grumman TBF Avenger

Aircraft carried 75ish
And modern jets and all the systems are just so complicated , There are no planes to spare and either they are up on deck & flying or down below for regular maint, or major repairs or hangar queen/parts donor.. they have to be accessible..
