Beef Tallow French Fries
Local grocery store had Bone in Rib-roast on sale, so I picked up a couple. Cooked one tonight for myself and Mrs. Beard.
We decided to air fry some French Fries. I noticed the nice beef tallow forming around the roast. About 20 minutes before it was done, I added the French Fries around the roast.
OMG! The difference in flavor and texture of the French Fries. I remember having steak au poivre in Paris (Durands) and they served fries with it. The flavor today reminded me of that!
I also remember that McDonalds used to use beef tallow for the fryers. The fries have suffered ever since.
I saved the leftover oil and plan to add to it. I may buy some tallow from a Wagyu beef ranch.
