IMHO his line about black and white isn't meant literally. Imagine life with no shades of grey, no nuance. Imagine having no option other than "this" or "that".
As for film. When a director shoots in B&W they have to pay close attention to lighting and composition. Think Ansel Adams. A great B&W film is a true work of art.
