On street 911s...
I dislike metal spoke steering wheels on anything later than an F Body. If the vehicle has metal trim, inside or out, the exposed spokes work. Otherwise... Meh.
I love the '80s four spoke steering wheels that were used in 911, 944, 928, 959, early 964, etc. Always have. Having worked on / been around 3.2s in-period, factory four spokes are just right to my eye and in my mind. At 380mm it's the right diameter for the non-power assisted steering job, especially if you're running anything larger than 205s up front.
I do prefer a slightly thicker grip however. This can be done by double wrapping the wheel (although you should also double wrap the spokes & hub to match). It really modernizes the feel of the wheel in a stealthy / OEM+ way. I really LOVE them in this configuration...

Furthermore, the four spoke wheel is available with a normal or extended hub, allowing you to better fit your ergonomic needs.
As much as I love the 993 RS Momo wheel in 964s & 993s, I'd argue it's too small for use in a G (especially with sticky / larger than 205s up front).
Elsewhere, I assume a lot of people think that the rotated speedometer looks "race" (because so many race cars have speedometers?). However, if we're intellectually honest, it' looks goofy. The fix is either the right diameter steering wheel for the job, or, if you're set on something smaller, have the speedometer (or a spare) refinished in a different layout and / or scale. I'd like to see see stock scale rotated X degrees, with the numbers rotated an equal / opposite amount such that they're upright/ square. John Bell is EXCELLENT to work with in this regard...
These funny lil' German cars are special, partially due to their quirks / uniqueness. Embrace the quirk, especially if the quirky form is more functional (leverage and visibility) than the alternative(s).
