I use a diff process for the hard boiled eggs and it's never failed me...
Cover the eggs with water in a pan uncovered...bring it to a good rolling boil...turn the heat off and cover the pan for 12 minutes. (leaving it on the cooling burner)
After 12 minutes..just run some cold water over so that you can handle them...the shells come off in just a few pieces easily.
