I've seen videos of this technique several times on the Internet. < EDIT > I guess this technique is called "live looping" and is a thing. I found a video with a short interview of and performance by the girl. She took piano lessons starting at 6, then drums starting at 10. Then I guess she learned some guitar and bass. Since she plays them all, she wanted to showcase that she could play them and so got into live looping at 17-18. < /EDIT >

Is that as impressive as it seems to me (wish I'd learned to play something when I was young). And how accurate are the videos with respect to what you hear in the videos? I have seen several (not just hers) where it all seems to be live. But I feel like there must be some additional "stuff" going on in the background to make it all come together as well as her videos.

In the "what covers are better than the original" thread someone posted this video. At the end of the video a guy goes on and on about how amazing the young lady that did the vocals is. I checked out the "behind the scenes" video, and that lead me to check our some of her videos.

Some of her other videos. She seems reasonably proficient at drums, guitar, bass, and keyboard. It's certainly impressive in my mind to play all of those instruments, but then to also make a song with all of them and vocals seems to me to be a step up in level of talent from doing any one of them.
