Yep, regular old rat traps will do the trick. Cheese might work, but I haven't had good luck with it. meat, like a slim jim will probably do the trick. The key is to put the trap some place that you know they go regularly. So if you've seen poop in the same place several times put the trap where you find the poop, or if you have multiple spots where you find poop, so you're pretty sure they run along a wall between those two spots, then put the trap right in their path.
Something like this. I'm sure there are 50 slightly different kinds that all work about the same and any of them will do the trick.
