I think there are multiple definitions and types of creole. Merriam Webster says:

While Wikipedia has an article just on the Louisiana variety (which is also what I would normally think of at the mention of "creole").

I do like Caribbean food. I'd be game to try Haitian, but if I'd had my heart set on cajun/NO style food, I'd also be disappointed.
