Temperature control is critical. 33 to 36 degrees F is optimal. For every degree above 40F, you lose a day in keeping time. It is a natural product. Once bacteria gets a start, it grows exponentially. When I worked for the dairy, temps were recorded at every stage of handling and distribution.
