You won't want to use pickled cactus. Use fresh, if you can find it, or leave it out.

A poblano and a chipotle are about as far apart as you can get. The adobo sauce that the chipotles are in is somewhat like a spicy barbecue sauce. That flavor will get added to the dish. Poblanos are basically thing skinned green peppers, generally without any heat. They contribute almost nothing.
