That's pretty cool. When I was in Atlanta I went to fellow Pelican KevinTodd's restaurant "The Pig And The Pearl". Great food and he showed us his smoker and if I remember it seemed similar although on a larger, commercial basis.
I think smoking is more technique and seasoning. The less you stress and fuss, the better.
