I occasionally hit 110-115. So yeah, I'm sure I could get more, but I think it would require a lot to get up to 30mpg, and I don't think I could pull that off. I don't have that kind of will power.

Yep. I have seen 30mpg in highway miles on the 5 fwy heading south @ 65 cruise with 2009 Cayman PDK and LOTS of CHP enforcement. I don't think 65 mph is acceptable on the highway in central Texas. You would get run over quickly by long haul trucks.
