Putting a Subaru gearbox in a G-body 911 will certainly change the character of the 911 and will most certainly lower the value of the car.
Porsche changed to the G50 for multiple reasons. Chief among them was to better deal with the expected increases in torque/power and to modernize the shifting behavior. The added weight and change in shifting behavior was not considered a positive change to the experience and character of the car by all parties then and certainly not today.
By all means, do what you want to your car. Just don't post on a discussion forum about your choices and expect everyone to agree that your choices are the only way to go and to cheer you on.
