I have more highline peripherals. Everything bolts to various trays. No quick clamps, etc. For flight sim, that would be ok, but not for driving. You'd be surprised how much weight you put on the pedals, etc.
I have done a lot of searching and cant seem to find that does both. Most people have just modified ones to make them work. Something like this might work as there seems to be room to add some type of center mount between the seats for a joystick

(and yes, I have VR also and while it is a completely immersive experience, three big screens are better suited as you need to be able to see a LOT of buttons/keyboard using the mouse, etc for activating various things so I find myself using those more.
