My wife's outback as a tray under the motor, but there's a hole in the tray to access the oil filter and another to access the oil pan drain plug. I seem to remember having some other vehicle in the past that had a tray, but the tray had a little door in it that was held in place by a single bolt on one side and a couple of tabs that inserted into slots on the other side.

That has me wondering if you could cut a hole/window in your tray that would give you the required access, and then make a door for that window out of some sheet metal or something. Probably a pain initially, but a time saver in the long run. But certainly won't be factory perfect any more.
