If you're only here once, don't miss Hwy 1 from Carmel to Cambria. Problem is, road was closed, was then opened, but may be closed again due to rain and subsequent mud slides recently. Hwy 33, Taft to Ojai, is worth the effort also. Not many back roads around El Segundo, but stay along the beach (PCH) Oxnard down to Santa Monica (or El Segundo).
