someone once gave me a nice tenderloin otherwise known as a sauce delivery vehicle in the way fries are for ketchup. No veal stock on hand so I went au poivre with green peppercorns and shiitake mushrooms in the Courvoisier based sauce. It was pretty amazing. My mom recently gave me a bunch of tenderloins so will have to figure out what to do with those.
