I have never done this, but a friend of does:
If you know your trip dates well enough in advance, you can book two economy seats next to each other for about half of business class, depending on the flight. He gets a window and a middle seat.
He does mostly east coast US to Europe so that is doable.
Flights to Asia? Business Class only.
